With the summer finally here (hooray!) my body literally screams for lighter and healthier meals. I try to keep snacking throughout the day or make meals that don’t require the oven or stovetop at all or only for a short time. Our apartment gets super hot on its own, it doesn’t need me to add even more heat to that.

In this post, I’ve compiled my 15 favorite easy vegan summer recipes that keep me cool. I’ve grouped the recipes into the following categories:
