Easy Pineapple Salsa (5 Ingredients, Vegan, Gluten-Free)

For my boyfriend’s 29th birthday we hosted a tiki party at our apartment and this Easy Pineapple Salsa was one of the foods we’ve served. The salsa was a big hit among the guests. And from the host’s perspective, it’s a great party food too because you can prepare it a few hours ahead (keep it in the fridge in the meantime) and it’s actually really easy to put together – even served in the pineapple.

Usually salsa recipes include raw onion, but I’m not really a big fan of raw onions and I don’t consider them very party-friendly, so there’s no onion in this Easy Pineapple Salsa recipe. Of course, you can add one if you want to but make sure you chop them really small.

You’ll only need 5 ingredients for this recipe:

  • a whole Pineapple
  • cherry tomatoes
  • red bell pepper
  • cilantro
  • and salt.

That’s all! But with the pineapple-salt-veggie combination, it doesn’t taste bland. I can promise you that. I’ve served this vegan Pineapple Salsa with tortilla chips.

How to make a Pineapple Bowl

Don’t think that it’s too hard to make a pineapple bowl to serve the salsa in. It’s really not. Cut off about 1/3 of the pineapple leaving the green intact. Then cut out small chunks of the pineapple with a knife and use a spoon to remove it. Repeat that until you have removed pretty much all of the pineapple and are left with the pineapple bowl. A smaller knife works best for this, so that you don’t cut through the pineapple skin. It only takes about 15-20 minutes but it’s so worth it! It looks so pretty, don’t you think?

So what drinks did we serve at our vegan tiki party?

We made a Watermelon Amaretto Bowl and a Gin Tonic Blue Ocean Cocktail (Simply stir Blue Curacao Liqueur in Gin & Tonic and add in ice cubes, lime and lemon slices – so good!).

Ingredients
 
 

  • 1 whole pineapple
  • 10 oz cherry tomatoes
  • 1 red bell pepper
  • 1 small bunch cilantro
  • 1/4 teaspoon salt

Instructions
 

  • Cut the pineapple lengthwise, with a knife cut the pineapple in chunks while leaving the outside intact to use the pineapple as the bowl. Spoon out the pineapple chunks. 
  • Remove the woody pieces of the pineapple core and cut the rest of the pineapple in small chunks. Cube the cherry tomatoes and red bell pepper (remove the seeds). Chop the cilantro.
  • In a bowl, mix together the pineapple, cherry tomatoes, red bell pepper, cilantro and salt. Transfer it in the pineapple bowl before serving and enjoy! It's delicious with tortilla chips, for example!

Sorry...just didn't care for this one. Had no flavor! Weird- because the presence of it was beautiful, but no taste for us!
