This vegan Coffee Nice Cream Shake is a refreshing and energizing treat for hot summer days. You'll only need 3 ingredients!

Okay, I'll admit it, I'm one of those "80% 'milk', 20% coffee drinkers". I just recently got into coffee, so I'll have to work my way up there, okay?
Oh, and I don't drink hot coffee, I only drink it in cold drinks - or frozen are even better! Like this Coffee Nice Cream Shake with frozen bananas. The bananas add enough sweetness (at least for me), so you don't have to add any additional sweeteners.
I love making my own cold-brew coffee. I always make a large batch that will last me a week. It's not hard at all to make and is SO MUCH CHEAPER than store-bought cold brews.
This is the perfect refreshing, energizing, delicious drink for hot summer days!
How to make this Coffee Nice Cream Shake
The ingredients
You will need:
- frozen bananas
- plant-based milk (I used unsweetened Rice Coconut Milk but you can use any you like!)
- cold brew coffee (or cold coffee)
- chocolate shavings (optional) - these are easy to make, you just need a piece of chocolate and a veggie peeler, then peel the chocolate, which will result in chocolate shavings.

Coffee Nice Cream Shake
Equipment
Ingredients
- 1 ½ frozen bananas in chunks
- ¾ cup rice coconut milk (or any plant-based milk!)
- ¼ cup cold brew coffee (or more if you want it stronger)
- chocolate shavings (optional)
Instructions
- Add the frozen banana chunks, plant-based milk and cold brew coffee in a blender and blend until smooth.
- Pour the nice cream shake into a glass and sprinkle with chocolate shavings.

I remember reading an article about cold brew about how there are less tannins and acidity levels are lower in cold brew coffee. That is why, they guessed, most non-coffee drinkers can tolerate cold brew much more. I either like my coffee hot and black or it is a cup of milk with a little coffee flavor (aka a latte XD

I just don't drink enough coffee to buy a coffee machine, so cold brew is the easiest for me :D

What are your thoughts on turning this into frozen nice cream? Would any other additional ingred. be needed to thicken or just freeze this deliciousness as is?!! I'm game!!! Thank you for a reply.

leave out the milk to make coffee nice cream. It would be even better to just use frozen bananas + espresso powder or instant coffee or something like that. For nice cream you want to eliminate as much liquid as possible. Also, it's best to make nice cream in a food processor (in my opinion), in a blender you would need a bit more liquid.
