You’ll only need 2 ingredients for these Vegan Blueberry Ombre Popsicles! They are the perfect summer treat and look so pretty! 

Vegan Blueberry Ombre Popsicles

I’ve always loved using soy yogurt as a base for easy and delicious popsicles. When I’m super lazy, I just use flavored soy yogurt. But this time I made pretty Blueberry Ombre Popsicles. They couldn’t be any easier to make, really. Just add bit by bit frozen blueberries to the soy yogurt and blend. This way, you’ll get blueberry yogurt that gets more and more color :)

Make sure you freeze these popsicles for at least 6 hours. Keep them in the freezer to always have a refreshing treat ready for the summer. You could also use other fruits to make ombre popsicles: Strawberries and raspberries will work just as fine.

Alternatives for soy yogurt

If you can’t eat soy or you want to avoid it, you can use coconut yogurt, almond yogurt or whatever plant-based yogurt you can get in stores near you.

Ingredients
 
 

  • 2 cups sweetened soy yogurt (see notes)
  • 1/2 cup frozen blueberries

Instructions
 

  • Put all the soy yogurt in a blender and add 1/8 cup of blueberries. Blend. Fill the first layer into popsicle molds. For the other layers, repeat adding 1/8 cup of blueberries, blend and fill in popsicle molds. Repeat until you have 4 layers. 
  • Stick in a wooden popsicle stick and put them in the freezer for at least 6 hours. Enjoy your easy summer treat!

Notes

If you want to use unsweetened soy yogurt, I'd suggest adding a bit of maple syrup (or agave or rice syrup)!

    Whoa!! These are by far the pretttiest pops I’ve seen all summer! And the easiest…therefore my favorite😊 And the fact that they center around the best berry doesn’t hurt either. I love them Bianca, can’t wait to try them!
