Seitan is amazing because you can make all the meaty dishes you used to love easily vegan.
It took me years of experimenting to finally master making seitan but it was so worth it! I’ve created a basic seitan recipe, that needs no kneading and no washing out the flour (we’re skipping that and using vital wheat gluten). You can make my basic seitan dough in a food processor, then steam it, pan-fry, bake, fry.. whatever you want to do with it!
But what is seitan?
Seitan is a vegan meat alternative. You can use seitan in any dish in which you want to substitute meat. Seitan is especially great for steaks, schnitzel, sausages, gyros, Philly cheesesteak sandwiches, pepperoni, curries, goulash or stews. To make seitan, we’re using vital wheat gluten.
What is vital wheat gluten?
Vital Wheat Gluten is made from the protein found in wheat. You can buy vital wheat gluten in powder form and it looks just like flour! It’s the key component for making seitan. It makes the seitan chewy, gives it a nice meaty texture and binds all the ingredients together. It’s pure magic. Except when you’re gluten intolerant. Then it’s not for you.
Can I freeze seitan?
Yes! I’ve tried it and it works really well. Steam the seitan, then let it cool off completely and freeze. You can freeze it for months and then when you’re ready to use it, let it thaw before pan-frying, baking, etc. the seitan. It’s good as new!
Basic Seitan Recipe
