What would the (pre-)Christmas season be without Candied Almonds? It would be pretty sad and not very Christmas-y, in my opinion.
These Candied Almonds are a fool-proof method to get you into the Christmas spirit.
And the best part is that they are really easy to make at home.
I keep mine pretty simple with just sugar and cinnamon powder. But you can also add special extracts or spices like ground vanilla, pumpkin spice, orange extract, or something like that, whatever you have lying around in your pantry.

Candied Almonds (Cinnamon Sugar Coated Almonds)
Equipment
Ingredients
- 2 cups almonds raw, unroasted
- 1/2 cup water
- 2/3 cup white sugar make sure it's vegan!
- 1 teaspoon cinnamon
Instructions
- In a large non-stick pan, heat the water, sugar, and cinnamon. Stir until the sugar dissolves.
- Keep the heat on high, add in the almonds, and keep stirring.
- The mixture will get thicker with time. Stir, stir, stir, until all the water is gone and the sugar sticks to the almonds (This process takes about 10-15 minutes).
- Reduce the heat once the sugar sticks to the almonds, but keep stirring until the sugar melts again and the almonds get shiny.
- Then pour the almonds onto a baking tray lined with parchment paper to let them cool off. Careful, they are very, very hot. Once they've cooled down, you can enjoy them!
