To make things easier and quicker, you can use store-bought tortillas or falafel. But I just love making things from scratch – not all the time – but on some days.

The falafel are made with canned chickpeas and are very freezer-friendly! So perfect for spontaneous falafel cravings.

Wraps are actually one of my favorite lunch meals because they are easy to make and great to take to work too!

Ingredients
 
 

  • 2 Homemade Wheat Flour Tortillas (I've made them yeast-free {see recipe notes for the tortilla recipe} and added 1 teaspoon of black and white sesame seeds into the dough)
  • 6 spinach falafel
  • 2 avocados - pitted and peeled
  • salt
  • lemon juice
  • 1 cup lambs lettuce
  • 10 cucumber slices - cut in half

Instructions
 

  • Prepare the tortillas and spinach falafel.
  • On each tortilla, mash one whole avocado and spread over the whole tortilla. Sprinkle with salt and add a squeeze of lemon juice. Add lambs lettuce, cucumber slices and spinach falafel.
  • Fold the wraps and enjoy!

Hi, Thanks for sharing the recipe! I've made the recipe with store bought tortilla but It was not well made. I've no time to make the tortilla at home, can you suggest me any good store bought tortilla?

I don't know any tortilla brands from the US, but there are different tortillas on the market (corn flour, wheat flour, mixes..) you can try a different one and see if you like it better. :)
