Vegan Banana Bread Waffles

These vegan Banana Bread Waffles are super easy to make! They are topped with maple syrup, banana slices, toasted almond slices, and hazelnut meal!

You can’t eat pancakes every day. You’ve got to mix it up with waffles. (: 

The batter for these Banana Bread Waffles is similar to my Banana Bread Pancakes batter but I made it slightly thicker for the waffle iron and removed the chocolate chunks to make it less messy.

As for the toppings, I’ve sprinkled the waffles with toasted almond slices, hazelnut meal, used a small cookie cutter to cut out banana stars and drizzled everything with maple syrup.

Toasted almond slices are super easy to make, just heat them in a hot pan for just a minute or so. It brings out the flavor and gives them a crunch.

The most important thing to keep in mind: Spray that waffle iron. Seriously. In the past, I’ve had my fair share of waffles ripping because they stuck to the waffle iron.

Ingredients
 
 

  • 1 very ripe banana
  • 1/2 cup unsweetened plant-based milk e.g. rice milk
  • 1 teaspoon maple syrup
  • 1 teaspoon sunflower oil or any other neutral plant-based oil
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon hazelnut meal
  • baking spray for the waffle iron

Toppings

  • 1 teaspoon toasted almond slices
  • 1/2 teaspoon hazelnut meal
  • 5 banana slices (I used a small cookie cutter to cut them in stars)
  • 1 teaspoon maple syrup

Instructions
 

  • In a bowl, mash the peeled banana and add the plant-based milk, maple syrup, and oil. Give it a quick whisk.
  • Add the flour, baking powder, and hazelnut meal to the wet ingredients. Whisk until incorporated.
  • Heat up the waffle iron and spray it with oil to avoid the batter sticking to the iron. Add an ice cream scoop or small ladle of batter*. Let it cook until there’s no more steam coming out of the waffle iron. Carefully remove the waffles from the iron, and repeat until you’ve used up all the batter.
  • Serve the banana bread waffles, sprinkle with more hazelnut meal, toasted almond slices, add banana slices and drizzle with maple syrup. Enjoy!
