If you try it, you'd never believe this drink (or should I say cream?) is healthy because it tastes so decadent, creamy and rich! Exactly like a Lemon Cheesecake! So let me present to you my naturally vegan, gluten-free and refined sugar-free LEMON CHEESECAKE SMOOTHIE! Yum!
I didn't know smoothies could taste that amazing. I would have started drinking them a long time ago! Seriously.
I'm usually not a smoothie person but this one turned out so amazing, I simply have to share it with you! After my boyfriend took the first sip, he rewarded me with a hug and applause and he said, that this is the best smoothie he ever had! And I think so too.
Do you remember my Lemon Cheesecake recipe? It's made with Alpro's Cremoso but unfortunately, it is only available in parts of Europe, but this smoothie tastes exactly like it! The only difference is that this smoothie is made with natural, healthy ingredients. If you wouldn't make this smoothie yourself, you would never believe it's healthy! It's perfect as a creamy dessert as well.
Lemon Cheesecake Smoothie (vegan & gluten-free)
Equipment
Ingredients
- 1 cup young coconut meat
- ¾ cup almond milk
- ½ teaspoon grated lemon zest + more to top the smoothie with
- 5 medjool dates , pits removed
- 1 cup plums , frozen*
Instructions
- Put all the ingredients in a high-speed blender and blend until completely smooth.
- Top with additional grated lemon zest and enjoy!

Sounds yummy, Bianca! I go through phases with smoothies. Sometimes I really like them and other times not so much. Lemon cheesecake in smoothie form sounds really good!

And the best part is, you don't actually have to make lemon cheesecake and blend it up - okay.. that sounds a bit gross.

Thanks Jenn! The smoothie tasted so decadent, rich and creamy, I thought about naming the recipe Lemon Cheesecake Cream or something.. but smoothie sounds much healthier and it really is healthy.

Mhhhh... that's an excellent question, Anjali. Honestly, I'm unsure. Maybe some coconut cream could work in place of the coconut meat.. but I'm not sure how much it will change the taste and consistency. I'd have to try it out first.

I had major dental surgery last week, and have a face full of stitches, swelling, and bruising, so can only have soups, smoothies, and congee. Thank you so much for having such perfect timing in posting this!
I made a version with creamed coconut - the type that comes in a block*, plus soaked prunes (plums are not in season right now... most of our food is locally-grown, and I have never seen frozen plums for sale). I didn't have any almond milk, so I used rice instead because no way am I venturing out to buy stuff while my face looks like it lost a fight with a train!
The smoothie was completely delicious... although due to the prunes, did look a little like Polyjuice Potion!

*We rarely get any coconuts here in Slovenia, let alone young ones. And to think that when I lived in India and Thailand, I could literally pick them up off the street after a rainstorm!

I'm glad you liked the smoothie with all those changes. Young Thai Coconuts are really hard to get here in Austria too.. I buy mine in Asia markets but they don't have them all the time. I've seen these young coconuts in regular supermarkets once or twice, so I'm hoping they get more popular. I got way too many plums last summer, so I froze most of them. I'll definitely gonna stock up on frozen plums this summer, so I can make this smoothie all year around :) because I don't think we have frozen plums in the stores here either. Get well soon ^.^

I did see three young coconuts in Hofer a few weeks ago but they were 3,50 euros each! Ouch! That is is the only time I've ever seen them here though. :-(
