Ginger Beer

I LOVE drinks with ginger. Ginger beer usually takes 2-3 weeks of fermenting but this is a much faster alternative: Yeast-free and alcohol-free Ginger Beer Syrup. Perfect for Moscow Mules!

Ingredients

  • 1 large ginger root
  • 3/4 cup white sugar
  • 2 cups water

Instructions

  • Peel the ginger and then slice it with a vegetable peeler into super thin strips.
  • In a pot, bring the water and sugar to a boil. Add the ginger slices. Let it simmer for 20 minutes.
  • Fill everything in a jar, let it cool off, and leave it in the fridge overnight.
  • The next day, take out the ginger slices. Don't toss them, they are perfect for some Pickled Ginger! Fill the syrup into a bottle (keep it in the fridge for up to a few weeks).
  • Fill about 1-2 tablespoons of ginger syrup in a glass and top with sparkling water.
