I LOVE drinks with ginger. Ginger beer usually takes 2-3 weeks of fermenting but this is a much faster alternative: Yeast-free and alcohol-free Ginger Beer Syrup. Perfect for Moscow Mules!
Servings 1 cup of syrup
- 1 large ginger root
- 3/4 cup white sugar
- 2 cups water
Peel the ginger and then slice it with a vegetable peeler into super thin strips.
In a pot, bring the water and sugar to a boil. Add the ginger slices. Let it simmer for 20 minutes.
Fill everything in a jar, let it cool off, and leave it in the fridge overnight.
The next day, take out the ginger slices. Don't toss them, they are perfect for some Pickled Ginger! Fill the syrup into a bottle (keep it in the fridge for up to a few weeks).
Fill about 1-2 tablespoons of ginger syrup in a glass and top with sparkling water.
