Candied Almonds (Cinnamon Sugar Coated Almonds)

Ingredients

  • 2 cups almonds raw, unroasted
  • 1/2 cup water
  • 2/3 cup white sugar make sure it's vegan!
  • 1 teaspoon cinnamon

Instructions

  • In a large non-stick pan, heat the water, sugar, and cinnamon. Stir until the sugar dissolves.
  • Keep the heat on high, add in the almonds, and keep stirring.
  • The mixture will get thicker with time. Stir, stir, stir, until all the water is gone and the sugar sticks to the almonds (This process takes about 10-15 minutes).
  • Reduce the heat once the sugar sticks to the almonds, but keep stirring until the sugar melts again and the almonds get shiny.
  • Then pour the almonds onto a baking tray lined with parchment paper to let them cool off. Careful, they are very, very hot. Once they've cooled down, you can enjoy them!
