Peel the carrots and spiralize them, and put them in a large bowl.
Mix the almond butter with the water, lemon juice and salt until smooth and pour it over the spiralized carrots.
Let the carrots marinate for about half an hour before serving them.
Top with Cashew Parmesan if you want!
Notes
Depending on the brand and storage of the almond butter, you may have to use more water than given in the ingredients. Simply use enough water to make a smooth & creamy almond dressing. I used my Spiralizer for the carrots, but you could also use a Julienne Peeler.
