Curry Hummus
- 2 cups canned chickpeas rinsed and drained
- 1 tablespoon tahini
- 3 teaspoons lemon juice
- 3/4 teaspoon salt (and more to taste)
- 1 teaspoon mild curry powder + more for sprinkling on top
- 1/2 cup water (add more if it's too thick)
- 1 teaspoon chili oil (optional for a spicy kick)
Toppings
- 1 teaspoon olive oil to drizzle on top
- 1 teaspoon fresh cilantro to sprinkle on top
Put all the ingredients for the curry hummus in your blender or food processor.
Blend until smooth (add more water if the consistency is too thick).
Add the hummus to a plate, drizzle it with olive oil, and sprinkle it with more curry powder and fresh cilantro. Enjoy!
