Vegan Yogurt Brownies with Cherries

These vegan Yogurt Brownies are much healthier than other recipes! I've added cherries, but feel free to add chocolate chips, other fruits or peanut butter! It's the perfect basic vegan brownie recipe for variations! You can even use coconut yogurt for a soy-free option.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 3/4 cup brown sugar
  • 1/4 teaspoon baking powder
  • 1/2 cup vegan yogurt (I used sweetened soy-almond yogurt)
  • 1/2 cup plant-based milk (e.g. rice milk)
  • 1 tablespoon coconut oil
  • 1 cup cherries (fresh & pitted, canned or frozen)

Instructions

  • Preheat the oven to 400°F/200°C. 
  • For the brownie, mix the all-purpose flour, cocoa powder, brown sugar and baking powder in a large mixing bowl. Add the yogurt, rice milk, and coconut oil and whisk until combined. Fold in the cherries.
  • Transfer the brownie batter into a loaf pan lined with parchment paper. 
  • Bake the brownies in the oven for 20-25 minutes until the top is crackly.
  • Let them cool off, then cut them into 8 pieces and serve!
