Caramelized Onions

  • 3 large yellow onions halved, and sliced
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil

Hummus

  • 2 cups canned chickpeas rinsed and drained
  • 2 tablespoon tahini
  • 3 tablespoons lemon juice
  • 1/2 teaspoon salt (and more to taste)
  • 1/3 cup water (add more if it's too thick)

Toppings

  • 1 teaspoon olive oil to drizzle on top
  • 1 teaspoon fresh parsley chopped, to sprinkle on top

Instructions

  • Cook sliced onions in a pan over medium to high heat with oil and salt until they’re caramelized. Stir every now and then to keep them from getting too dark.
  • Add the chickpeas, caramelized onions (not all; save about 2 tablespoons of caramelized onions to add on top later), tahini, lemon juice, salt, and water into a blender.
  • Blend until smooth (add more water if the consistency is too thick).
  • Spread the hummus onto a plate, drizzle it with olive oil, add the rest of the caramelized onions, and sprinkle it with fresh parsley.
