Vegan Chickpea Tuna Salad

Chickpeas make a great tuna-inspired sandwich filling. The dill, nori, capers, lemon juice, mustard, and tahini add to that typical flavor. The „tuna“ salad is also delicious in wraps!

Ingredients

  • 1 3/4 cups canned chickpeas rinsed and drained
  • 2 canned artichoke hearts
  • 1 tablespoon capers
  • 2 tablespoons lemon juice
  • 2 tablespoons tahini (sesame paste)
  • 2 teaspoons dijon mustard
  • 1/4 cup fresh dill
  • 3/4 teaspoon salt
  • 1/2 sheet nori (dried seaweed)

Instructions

  • Add all the ingredients for the Chickpea Tuna into a food processor.
  • Pulse until it's chopped up and well mixed.
