Stewed Apples
These stewed apples with maple syrup and salted butter make the perfect topping for pancakes, overnight oats, and porridge.

- 1 red apple (e.g. Red Delicious, Gala, Pink Lady, ...)
- 2 tablespoons vegan salted butter
- 1 1/2 tablespoons maple syrup
- 1/2 teaspoon cinnamon powder
Cut an apple into small evenly chunks. I leave the skin on but you are free to remove it if you prefer it that way.
In a small pot over low heat, melt the butter, add in the maple syrup and cinnamon powder. Give it a quick whisk.
Add the apple chunks into the pot and stir.
Keep it on medium heat for 15-20 minutes, until the apples are soft.
Then you can use the warm stewed apples immediatelly or fill them into a jar and keep them in the fridge for up to three days.
