  • 1 tablespoon canola oil
  • 1 white onion - diced
  • 3 garlic cloves - minced
  • 2 cups potatoes - diced
  • 1 teaspoon cumin seeds
  • 3 teaspoons paprika powder
  • 3/4 teaspoon salt
  • 3 cups water (divided)
  • 1/4 teaspoon liquid smoke
  • 2 teaspoons soy sauce
  • 1 tablespoon tomato paste
  • 2 tablespoon tomato purée *
  • 3 seitan sausages


  • Heat the canola oil in a big pot.
  • Add the diced onion and minced garlic and cook until translucent.
  • When the onion and garlic are starting to brown, add the diced potatoes, cumin seeds, paprika powder, and salt. Give it a good mix. Let it sizzle for 1-2 minutes. Then add 2 cups (500 ml) of water, liquid smoke, soy sauce, and tomato paste.
  • Let it cook with the lid on for about 45 minutes. There will be a reduction of the water. You can add more water (I've added another cup of water) if too much water evaporates. Let it cook again for a little while to get a thicker consistency. Add in the tomato purée.
  • Cut the seitan sausages in slices and pan-fry them in a pan. Then add them to the goulash. Stir everything together and serve! I've sprinkled chopped parsley on top.


*I used store-bought tomato purée (with salt, no additional herbs) for this recipe - it's often canned or in cartons, not to confuse with tomato paste which is thicker in consistency.
