Simple Vegan Chocolate Muffins

Recipe for simple vegan Chocolate Muffins made with cocoa powder, chocolate soy milk and chocolate chips. So soft and fluffy! No eggs, no dairy.

There are times, when you need muffins ASAP. And for exactly these muffin emergency times, these are perfect! They come together in only 10 minutes of prep time and 20 minutes of baking time. The batter is a simple vegan chocolate batter using chocolate soy milk and cocoa powder (+ chocolate chips on top!) and can be made in 1 bowl.

To divide the chocolate batter equally in the muffin liners, you can use an ice cream scoop. It works wonders! Top them with chocolate chips and off in the oven they go. 15-20 minutes later, you’re rewarded with soft and fluffy chocolate muffin deliciousness.

Ingredients
 
 

  • 1 1/4 cup all-purpose flour
  • 1/3 cup white sugar (make sure it's vegan!)
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 tablespoons cocoa powder
  • 1 pinch salt
  • 1 tablespoon melted coconut oil
  • 2/3 cup chocolate soy milk
  • 1/2 teaspoon coconut vinegar or apple cider vinegar
  • 1/2 teaspoon vanilla extract
  • 1/3 cup vegan chocolate chips

Instructions
 

  • Pre-heat oven to 360°F/180°C.
  • In a mixing bowl, combine all the dry ingredients (except the chocolate chips), whisk, then add all the wet ingredients and whisk again until it's a smooth batter.
  • Fill the batter in muffin pan lined with muffin wrappers (use an ice cream scoop to divide them equally). Add a few chocolate chips on top of each one.
  • Bake for about 20 minutes. (Use the Toothpick Method to make sure the dough is done in the middle.)
  • Let them cool off a bit before enjoying them.

So I’m a very new vegan and don’t have a lot of vegan replacements on hand yet so I have a few questions... 1) What do you mean by white sweetener? Would maple syrup, coconut sugar or raw sugar work? 2) Do you think I could use melted vegan becel (margarine) instead of coconut oil? 3) What do you think I could use instead of coconut vinegar?

Sorry for all the Questions! These look amazing and I’m really craving chocolate muffins. Do you have a vegan brand of chocolate you can recommend?

Hi Hayley! 1) Sorry I was so unclear! I meant white sugar (updated that now in the ingredients) but you can totally use coconut sugar or raw sugar. I'm not super familiar with coconut sugar, so might have to add a bit more if it's less sweet. 2) You can absolutely use melted becel or sunflower seed oil or canola oil instead of the coconut oil. 3) Apple Cider Vinegar works just as fine!

My favorite chocolate bars are from Veganz (it's a german brand), vego bar, iChoc bars, vivani has vegan ones (especially the white nougat crisp is <3). Not sure if any of these are available where you are. I'm from Austria/Europe. If you meant baking chocolate, I don't have a favorite. I just buy the cheapest because these are often accidentally vegan (vegan ingredients, no vegan label). Hope you enjoy the muffins! :)

absolutely! you could also whisk in a teaspoon of cocoa powder into the milk to make a quick chocolate milk :)

Now! Right now is one of those times when I need muffins ASAP. Honestly sometimes it's a struggle to actually make other baked goods and not just make muffins every single day haha! They are just so perfect and crave-worthy. Especially with chocolate involved, chocolate in 3 forms I should add. These sound marvelous, I wish they were already in my oven!
