Flavorful Olive Flatbread (vegan)

This flavorful Olive Flatbread is my go-to-bread when we’re meeting friends for a BBQ/cookout/grilling session. It’s not only topped with olives, but also minced garlic. Plus, there’s dried oregano and basil incorporated into the dough, which gives it a nice mediterranean flair.

When I mentioned the olive flatbread in the Cheesy Hasselback Potato post, many asked me for the recipe. And I wouldn’t dare to keep the recipe from you.

This Olive Flatbread is very flavorful, because I’ve added dried oregano and basil into the dough and topped it with green olives and minced garlic. It’s absolutely perfect with grilled veggies! We’ve grilled marinated eggplants, zucchini and chicory. It’s was absolutely divine!

Thanks to the yeast in the bread, it’s super fluffy and has large holes. But of course, that also means, that it needs 1-2 hours to rise – depending on the room temperature. However, it’s totally worth it!Olive Flatbread | ElephantasticVegan.com

Recipe for a simple but flavorful herbed Olive Flatbread. This is such a great side dish for BBQs and cookouts! Everyone will love it!

Ingredients
 
 

  • 2 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour *
  • 1 teaspoon instant yeast
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1 teaspoon olive oil
  • 1 cup water
  • 1 cup olives , halved, pitted
  • 2 garlic cloves , minced

Instructions
 

  • In a large mixing bowl, add the flours, instant yeast, dried oregano, dried basil and salt. Give it a quick mix. Then add in the oil and water and mix until combined.
  • Let it sit, covered unter a clean kitchen towel, in a warm spot until it doubles in size (about 1½-2 hours).
  • Preheat the oven to 480°F / 250°C.
  • Transfer the dough to a baking tray lined with lightly floured parchment paper, press down the dough a bit so it's evenly thick. Top with olives and minced garlic and press it into the dough.
  • Then put the bread in the oven and bake for about 15 minutes until golden on the surface.

Notes

* No whole wheat flour at home? No problem! You can simply use more AP flour!

If you press the dough to about 1 inch (2-3 cm) thickness, it will puff up just a bit and it will be a good height :)

Like your other recipes that I've tried, this was simple and delicious. Made it to go with dinner and had the leftovers with tofu scramble for brekkie. Keep up the great work! This vegan beginner is glad to have found you!

Hi Bianca,

A Dutchy here :-) I am not a vegan, not even a vegetarian. I always tried to eat ones or twice a week vega/vegan. But after reading the horrible stories of how our animals are treated, I want to eat less meat. When I eat it, I try to buy bio and as healthy meat as possible. I know, not perfect, but I'm trying ;-) I love to eat curry's and other Asian food, quite easy to make it vegan. Your recipes look delicious!

This bread also, maybe i'll add some slices of dried tomatoes. I think i'll serve it with Italian tomato soup as a starter and pasta or lasagna afterwards.

This + grilled veggies and I would be a happy dinner camper every single night! And it sounds like such a simple and summery pairing too. The texture looks lovely, you and your bread recipes are actually one of the main reasons I want to find a way to get gluten back in my diet asap! :D

Hahaha I'm sorry that I'm teasing you with all the bread recipes! I..just...can't...stop :D Usually when we're grilling outside, me and my boyfriend buy all kinds of convenience products .. veggie sausages, patties, you name it.. like crazy! But now we've have been experimenting more with grilled veggies ..especially eggplants are so great for grilling. Now I'm making myself hungry again :D
