Als Sommerkind bin ich immer wieder schockiert wie schnell es geht, dass dann gleich der Wintermantel von ganz hinten aus dem Kasten ausgepackt werden muss. Aber statt verzweifeln, kann man zumindest das Beste daraus machen und das hei&szlig;t f&uuml;r mich, all die leckeren Herbst-Gem&uuml;sesorten voll auszukosten.<\/p>\n<p>Und hier kommt die vegane K&uuml;rbis-Lasagne wieder ins Spiel. Diese Lasagne beinhaltet K&uuml;rbisst&uuml;ckchen in der Tomatensauce und geschnittene K&uuml;rbisscheiben ganz oben, deswegen ist sie einfach das perfekte herbstliche Gericht. Solltest du dich also jemals schlecht, deprimiert, kalt, m&uuml;de oder launisch f&uuml;hlen, mach ein gro&szlig;es Blech Lasagne und du wirst dich sofort besser f&uuml;hlen! Diese Lasagne wollte ich aber komplett glutenfrei machen, deswegen habe ich eine Cashew-K&auml;se-Sauce verwendet. Sie ist perfekt cremig und lecker. Ich habe sie nicht nur f&uuml;r ganz oben zum &Uuml;berbacken verwendet, sondern auch als Bechamel-Ersatz f&uuml;r die Schichten dazwischen.<\/p>\n<p>Um der Mahlzeit auch etwas Gr&uuml;nes abzugeben, habe ich die Lasagne mit gemischtem Salat und selbstgezogenen Radieschen-Sprossen serviert. Sie sind eiwei&szlig;reich und ballaststoffreich.<\/p>\n<p>Oft sind glutenfreie Alternativprodukte in ihrer Konsistenz unvergleichbar mit herk&ouml;mmlichen Weizennudeln, bei der Bohnenpasta von PepUpLife konnte ich das aber &uuml;berhaupt nicht feststellen. Ich ziehe Sprossen! Wie cool ist das denn?!<\/figcaption><\/figure>\n<p>Ich war super aufgeregt, als ich die Sprossen f&uuml;r diesen Beitrag ziehen konnte. Meine bisherigen Erfahrungen mit dem Sprossenziehen beschr&auml;nken sich auf Kresse auf K&uuml;chenrollenpapier, wie wir es im Kindergarten gelernt haben.<\/p>\n<p>Ich bin so froh, dass ich mich letztlich doch getraut habe, denn jetzt bin ich der gr&ouml;&szlig;te Fan davon. Ich habe den Sprossenbeutel und den Siebbecher ausprobiert und beides hat wunderbar funktioniert. Es war intuitiv, einfach und hat Spa&szlig; gemacht. In beiden F&auml;llen beginnt man damit, die K&ouml;rner einzuweichen (f&uuml;nf bis acht Stunden), anschlie&szlig;end werden sie ein bis zwei Mal t&auml;glich abgetropft und abgewaschen. Minimaler Zeitaufwand! Dann in einen Standmixer geben, die restlichen Zutaten (Hefeflocken, Salz, Zitronensaft und frisches Wasser) hinzuf&uuml;gen und auf hoher Stufe mixen, bis eine cremige Cashew-K&auml;se-Sauce entsteht.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">K&uuml;rbis-Lasagne<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-12519-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Den Hokkaido-K&uuml;rbis in die H&auml;lfte schneiden und die Kerne entfernen. Eine H&auml;lfte nochmal in die H&auml;lfte schneiden und den K&uuml;rbis sch&auml;len. Dann die zwei gesch&auml;lten Viertel auf einer Hobel in Scheiben schneiden oder mit dem Messer d&uuml;nne Scheiben abschneiden (diese werden dann ganz nach oben auf die Lasagne kommen). Die &uuml;briggebliebene H&auml;lfte des K&uuml;rbisses, sch&auml;len und in kleine St&uuml;cke schneiden (diese kommen in die Tomatensauce).<\/span><\/div><\/li><li id=\"wprm-recipe-12519-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">In einen gro&szlig;en Topf das Raps&ouml;l erhitzen und die geschnittene Zwiebel und den Knoblauch bei mittlerer bis hoher Hitze anr&ouml;sten, bis diese weich werden. Dann die K&uuml;rbisst&uuml;cke hinzuf&uuml;gen und f&uuml;r ca. 3-4 Minuten anbraten. Die Hitze verringern und die passierten Tomaten, Kr&auml;uter und Salz hinzuf&uuml;gen. F&uuml;r ca. 10-15 Minuten kochen lassen.&nbsp;<\/span><\/div><\/li><li id=\"wprm-recipe-12519-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Den Ofen auf 250&deg;C vorheizen.&nbsp;<br><\/span><\/div><\/li><li id=\"wprm-recipe-12519-step-1-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Die Ofenform mit &Ouml;l bepinseln und zuerst mit einer d&uuml;nnen Schicht K&uuml;rbis-Tomatensauce beginnen, dann Lasagnebl&auml;tter, K&uuml;rbis-Tomatensauce, eine d&uuml;nne Schicht Cashew-K&auml;se-Sauce, Lasagnebl&auml;tter, K&uuml;rbis-Tomatensauce (in dieser Schicht alle K&uuml;rbisst&uuml;cke verwenden), Cashew-K&auml;se, Lasagnebl&auml;tter, Tomatensauce (dieses mal ohne K&uuml;rbisst&uuml;ckchen) und die restliche Cashew-K&auml;se-Sauce. Ganz oben kommen dann noch die geschnitten K&uuml;rbisscheiben, diese m&uuml;ssen wieder mit etwas &Ouml;l bepinselt werden.&nbsp;<\/span><\/div><\/li><li id=\"wprm-recipe-12519-step-1-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Die Lasagne im
