Cantaloupe

is my favorite melon! I’ve used Cantaloupe in my 2-Ingredient Cantaloupe Ice Cream before and it turned out great, so I really wanted to give Cantaloupe popsicles a try as well. According to Wikipedia, cantaloupe is also called muskmelon, mushmelon, rockmelon, sweet melon, Persian melon, and spanspek.

Lucuma Powder

is dried and powdered lucuma fruit. Lucuma is often used as a low-glycemic sweetener and it contains nutrients like beta-carotene, iron, zinc, vitamin B3, calcium and protein. You can add it to smoothies, raw cakes or like in this case – to popsicles :)

Rice Syrup

is my favorite liquid sweetener because it’s fructose-free. I use it in pretty much all of my dessert recipes. If you don’t have rice syrup at home, you can easily substitute it with maple syrup or agave syrup.

Plant-Based Milk

I used unsweetened soy milk in this recipe, but you can use any plant-based milk – almond, rice, coconut, oat, hemp.. whatever your heart desires and what you have at home!

Ingredients
 
 

  • 1 cup chopped cantaloupe
  • 1/4 cup plant-based milk (I used unsweetened soy milk)
  • 1 teaspoon lucuma powder
  • 1/2 tablespoon rice syrup (or maple syrup or agave syrup)

Instructions
 

  • Toss all the ingredients in a blender and blend until smooth.
  • Fill the mixture in popsicle molds, add the popsicle stick.
  • Freeze for at least 5 hours and enjoy!

Soy Milk is not healthy for anyone for many reasons - only fermented organic soy, as in tempeh, is not harmful and actually quite nutritious and beneficial as a protein for vegans especially. There are many conclusive studies on agave and this is also not a healthy product, actually quite detrimental to your health. I am very disappointed when I see what are supposed to be healthy alternatives using really not very healthy products. Alternative is not always healthier and vegans need to do better research before they are led astray!

Thank you for your comment, Rita. You can almost always sub soy milk with nut, oat, or hemp milk. I'm using a variety of plant-based milks in my recipes and have been using soy milk very sparingly. However, I don't think soy is bad in general, it's all about moderation but there are different opinions on this huge soy topic. And as for the liquid sweetener, agave, rice syrup and maple syrup are interchangeable.

I have been eating SO much cantaloupe lately. If I explode in the near future, you can be sure it was from overconsumption of cantaloupe. It's just so tasty right now, so naturally that means I want to eat even more of it on a stick in pretty popsicle form! The color is beautiful. And lucuma + cantaloupe--an unlikely but sounds very scrumptious pair!

I completely understand you! Cantaloupes are too good not to eat all.the.time :D Is lucuma and cantaloupe an unusual pair? I don't know.. it seemed like a typical combination in my mind. Anyways, it was my first time working with lucuma powder and I really liked it, I'll definitely use it more often in the future. :)

Yeah, I always buy cantaloupes when they are in sale too (which they usually are around this time of the year). Melons are one of the best things in the summer :) I wish stores had super simple popsicles like that.. but on the other hand.. it's so easy to make them at home, I'd probably just make them myself anyways.
