is my favorite melon! I’ve used Cantaloupe in my 2-Ingredient Cantaloupe Ice Cream before and it turned out great, so I really wanted to give Cantaloupe popsicles a try as well. In case you’re wondering, cantaloupe is also called muskmelon, mushmelon, rockmelon, sweet melon, persian melon and spanspek. (Thank you, Wikipedia)
is dried and powdered lucuma fruit. Lucuma is often used as a low-glycemic sweetener and it contains nutrients like beta-carotene, iron, zinc, vitamin B3, calcium and protein. You can add it to smoothies, raw cakes or like in this case – to popsicles :)
is my favorite liquid sweetener because it’s fructose-free. I use it in pretty much all of my dessert recipes. If you don’t have rice syrup at home, you can easily substitute it with maple syrup or agave syrup.
I used unsweetened soy milk in this recipe, but you can use any plant-based milk – almond, rice, coconut, oat, hemp.. whatever your heart desires and what you have at home!
Toss all the ingredients in a blender and blend until smooth.
Fill the mixture in popsicle molds, add the popsicle stick.
Freeze for at least 5 hours and enjoy!
